Which flour fits which bake?
Match protein to the crumb you want: low protein for tender, high protein for chew.
Maida is the base for naan, bhatura, white bread, cakes, biscuits and samosa wrappers, where a soft tender crumb is wanted. Its 8 to 11 percent protein builds just enough gluten to hold a shape without turning chewy.
Bread flour at 12 to 14 percent protein is the choice when a dough needs to trap gas and hold a tall rise — sandwich loaves and enriched doughs behave better on that strength than on maida alone.
Whole-wheat atta carries 10 to 12 percent protein but also the bran and germ, so the gluten it forms is cut by sharp bran flakes. The result is a denser crumb even though the protein number looks competitive.

How much water does the flour take?
Set hydration by flour weight, then adjust for bran and cup density.
Gluten forms when flour is hydrated and worked, and a typical bread dough runs 60 to 70 percent hydration by weight of flour. Weigh the flour rather than scooping it: one cup of maida weighs about 125 grams while one cup of atta weighs about 120 grams, so a like-for-like cup swap already shifts hydration before any bran effect.
Bran drinks water that would otherwise go into gluten, which is why replacing a cup of maida with whole-wheat atta usually needs about 2 extra tablespoons of liquid. Add that liquid gradually; a dough that felt right with maida can read as dry and stiff with atta at the same nominal hydration.
